So sorry for the delay!  We recently tried a few more recipes wanting to continue our quest for healthy, wholefood recipes that keep us quasi-vegan ;).  As I continue to find good (no – GREAT) food bloggers, I’ll continue to share my finds!  I apologize for being lazy this month with no recipes of my own. No matter – you now have some ideas for Labor Day weekend here in the USA.

Sweet Potato Black Bean and Kale Enchiladas

They even found a cashew nut “Sour Cream” recipe to go with this. MMM! To go GF, use corn tortillas listed as GF, or simply serve the enchilada mixture over a bowl of brown rice. It works well with both alternatives!

Smoked Paprika Vegan Cheese

Want to include cheese in your enchiladas? Try them with this recipe courtesy of Cooking with Plants. We found the amount of smoked paprika to be a bit strong, so start with less – you can always add more.  Make sure you cook the agar agar until it is gooey, or the cheese won’t set.
